Art in the Age and Di Bruno: ROOTmere
Art in the Age has partnered with esteemed Di Bruno Bros. specialty Stores, of Philadelphia, to release a limited edition ROOT washed Winnimere cheese. This semi-soft, cow’s milk cheese is produced by Vermont’s Jasper Hill Farm. Produced seasonally from November to April, Winnimere is a washed rind cheese that during its maturation of about two months, is regularly brushed with Art in the Age’s ROOT liqueur.
Inspiration for the cheese comes from the Swiss cheese Forsterkase and in the same style, each Winnimere is encircled in a strip of spruce bark, cut from trees on Jasper Hill’s land that helps to maintain the shape of the cheese as well as impart a woody flavor.
When ripe, the interior is smooth, velvety and almost soup-like. The flavor becomes more intense closer to the spruce rind and small, crystallized amino acids give the surface rind a slightly crunchy texture. Flavors of Winnimere are complex and multi-layered. Tastes of milk, grass, almonds and wood shine through, balancing each other and leaving a long, lingering finish.
The ROOT Washed Winnimere Cheese will be sold exclusively, and for a limited time, by Di Bruno Bros. The cheese is priced at $29.99 per pound. Di Bruno Bros. and Art in the Age will be sampling the cheese for the public on:
