Phoebe Esmon of Chick’s Cafe - ROOT Cocktails

Flavors from all over Italy, Spain and France can be found in this South Philly bar - Chick’s Café  & Wine Bar. This neighborhood watering hole and restaurant brings together fresh ingredients in their menu and behind the bar – giving ROOT a new home with like minded individuals.

Phoebe Esmon, the head bartender at Chick’s has gotten her hands on ROOT and has tasted/created some fantastic cocktails with it. Her use of fresh ingredients combines well with the unique flavors of ROOT. See what Phoebe has to say about ROOT Liqueur:


AUTUMN LEAVES

½ oz ROOT
¼ inch slice of ginger
2 leaves mint, torn and smacked
1½ oz Booker’s Bourbon
1½ Laird’s 7½ Year Apple Brandy
3 dashes Heart of Darkness bitters (homemade by Phoebe)
½ oz fresh lemon juice
½ oz spiced simple syrup
finish: flamed orange twist
garnish: mint sprig, smacked

1. Chill a martini glass with ice (discard ice after glass is chilled)
2. Mix ingredients, add ice, stir
3. Double strain into a martini glass


Largo Al Factotum Della Citta or “Make way for the big man in town” (from Figaro)

1 oz fig puree
1½ oz Wild Turkey Rye
1 oz Averna (Italian Amaro)
½ oz ROOT
½ oz fresh lemon
½ oz honey simple syrup
1 dash Fee Brothers Whisky Barrel Bitters
1 dash Angostura bitters
garnish: slice of fresh fig

1. Shake all ingredients
2. Double strain onto rocks
