An Evening of Perfect ROOT Pairings at ALFA

Alfa was packed to the gills last night with Philadelphians eager to be regaled with five ROOT-infused courses and five complementary ROOT cocktails. From the ROOT-cured gravad amuse bouche to the “Dust and Beans” finale, the menu did not disappoint. And the ROOT kept flowing until 2am. Not bad for a Tuesday night!

 

It’s impossible to say that any one pairing stole the show, but Kate Loeb’s “Dr. Hadley’s ROOT Restorative” made quite a strong case. Paired with an apple-and-raisin-stuffed, ROOT-brined pork loin, the ROOT Cocktail Competition champion played wonderfully on the course’s fall flavors, conjuring images of apple orchards and all things autumnal. What a way to ease into the colder months!

Amuse Bouche

Root Brined Pork Loin – stuffed with Apples and Raisins and served with a Rosemary Celeriac Puree and Root Demi Glace

Fourth Course
Grilled Venison – Huckleberry Reduction, Root infused Potato Hash

paired with
Pennsyltucky Smash by Noble American Cookery’s Christian Gaal (guest bartended)


Dessert
Root Float Roundabout – Root Ice Cream with Vanilla Creme Soda

    An airline captain was breaking in a very pretty new blonde stewardess. The route they were flying had a stay-over in another city, so upon their arrival, the captain showed the stewardess the best place for airline personnel to eat, shop and stay overnight.
    The next morning as the pilot was preparing the crew for the day's route, he noticed the new stewardess was missing. He knew which room she was in at the hotel and called her up wondering
    what happened to her. She answered the phone, sobbing, and said she couldn't get out of her room.
    “You can't get out of your room?” the captaind asked, “Why not?”
    The stewardess replied, “There are only three doors in here, “she cried,” one is the bathroom, one is the closet, and one has a sign on it that says “Do Not Disturb”!!
