Organic Spirits and Beers Make a Gentle Impact
The two categories are ramping up to rival wine.

Sometimes organic is the way to build a flavor authentically. ROOT and SNAP, two new herbal spirits based on historical recipes, come from Philadelphia’s Art in the Age of Mechanical Reproduction, a store, museum, and, yes, liquor creator (they are made under contract at the same organic distillery that produces Tru Vodka). Founder Steve Grasse explains that going organic is a lot of work, but he “wanted the products to be historically accurate. … Developing certified organic spirits based on rustic folk recipes begins a re-thinking process on how we view the relationship between spirits and agriculture.”
