Mennonite Ginger Snaps Recipe

Here’s what you’ll will need:


1 cup shortening                 7 cups flour
2 cups dark molasses          2 teaspoons ginger
½ cup brown sugar             ½ teaspoon salt
½ cup water                       2 teaspoons soda

 

Combine molasses, sugar and water and cook together slowly for 15 minutes.

Just before removing from heat, add shortening and ginger.

Stir until shortening is melted.

Cool mixture and add soda, salt and flour.

Mix together thoroughly

Chill dough for several hours

 

Turn out dough on a lightly floured board and roll as thin as possible.

Cut into round cookies.

Bake  @ 375 degrees until crisp and golden

Makes 8 dozen. Cookies improve if allowed to ripen in a stone jar for several weeks.
