Born in Brooklyn Hospital and raised in Astoria, Queens, Christian R. Gaal moved to Philly to escape the New York smoking ban, and has been here ever since.  He tends bar at Noble American Cookery, and at the bar formerly known as Apothecary.  Noble serves lovingly prepared seasonal American cuisine, fine American wine and beer, and classic American cocktails.  APO is a high-concept, high-volume, high-roofdeck-ed cocktail lounge that serves idiosyncratic drinks as well as lovingly prepared draft beer.  Christian knows a few more than a few classic drinks, and his original cocktails show both a respect for tradition and a commitment to experimentation. He may be found at his places of work, often in an advanced state of thirst; or at other bars where fine cocktails are served, often in an advanced state of refreshment, and in either case telling stories that sound too tall for their own good.  But every last word of those stories is the essence of truth
