SNAP Recipe: Cranberry Shrub
This year for the holidays, Art in the Age has teamed up with resident cooking guru, The Reverend Michael Alan, to create a series of ROOT and SNAP inspired food and drink recipes for the holiday. These recipes are easy to prepare, and great for entertaining.
The following recipe for cranberry shrub is based on 18th-century shrub drinks made with fruit juice and spirits. Shrub was a way for colonials to preserve expensive exotic fruits, and serve them throughout the winter. Pick up a bottle of SNAP or ROOT and try out this delicious concoction at home.
Cranberry Shrub
3 Cups Cranberries
1 Cup Sugar
1 Cup Vinegar
3 Cups of Water
In a saucepan heat all the ingredients until the cranberries burst and become tender- this should take about 20 minutes. Working in batches, puree the mixture in food processor
and then transfer to a cloth lined colander set in inside a large mixing bowl to strain.
Once strained, fill bottles, cool and enjoy. This makes about a liter of shrub and it will last in the refrigerator for a couple months.
Cranberry Shrub Punch
1 part Cranberry Shrub
1 part Root or Snap
Sparkling Cider or Hard Apple Cider.
Pour the shrub and Root or Snap into a glass. Top off with your mixer of choice.
